Mockingbird Food Group was founded by industry veterans with almost 50 years of experience in the food industry. We are committed to packing the highest quality refrigerated and frozen foods for our customers. Leadership
Olden Akel
General Manager
Olden serves as Mockingbird’s General Manager, overseeing all aspects of the plant’s operations. Olden joined Mockingbird shortly after the company’s inception as the Director of Food Safety and Quality Assurance (FSQA). Prior to Mockingbird, Olden was the Director of FSQA for Blue Apron in their DFW area facility.
Savannah Lay-Fawks
Director of FSQA
Savannah joined Mockingbird in 2024. As the Director of FSQA, she oversees all aspects of the company’s Food Safety and Quality Assurance programs. Savannah helps ensure that all Mockingbird products meet the highest standards for safety and quality. Prior to Mockingbird, Savannah worked for Tyson Foods overseeing FSQA for one of their prepared foods facilities.
John Alegria
Inventory and Logistics Manager
John joined Mockingbird in 2022. As Inventory and Logistics Manager, John oversees a complicated supply chain and helps ensure that the plant operates smoothly on behalf of Mockingbird’s customers. John joined Mockingbird from Amazon, where he oversaw time-sensitive same day order deliveries for one of the busiest delivery centers in the DFW area.
Ulises Rosas
Production Manager
Ulises joined Mockingbird in 2021 as a key member of Mockingbird’s production team. He quickly grew to become a Quality Assurance technician, and ultimately the Quality Assurance Supervisor. As Production Manager, Ulises leverages his deep experience in quality to ensure that the plant produces the safest and highest quality products for its customers.
Erika Spretz
Accounting Manager
Erika joined Mockingbird in 2022. As Mockingbird’s Accounting Manager, Erika works closely with customers and suppliers to make sure the business operates smoothly. Prior to Mockingbird, Erika operated small businesses of her own, including a franchise retail establishment, as well as providing accounting services to small and medium sized businesses.
Omar Gama
Maintenance Manager
Omar joined Mockingbird in 2021 as a machine operator. Omar gained tremendous on-the-line experience and ultimately transitioned to the maintenance team. As Maintenance Manager, Omar coaches and supports a team of maintenance technicians to ensure that Mockingbird’s equipment and facility are kept running at the highest standards of efficiency and safety.
